Chili Mac and Cheese<\/strong><\/span><\/h2>\n

Firstly, yes I am English and using \u2018Chili\u2019 with one \u2018L\u2019. This dish is way more American than it is British, so I\u2019m respecting the single L \ud83d\ude01<\/p>\n

Chili Mac and Cheese is exactly what it says on the tin \u2013 Chili with Macaroni and Cheese. Typically you\u2019d cook a chili fairly low and slow, but this is a much quicker<\/strong>, carbier<\/strong> version. Perfect for a midweek dinner<\/strong>!<\/p>\n

The Beef<\/strong><\/h3>\n

I typically go for 10% fat<\/strong>. You want a little bit of fat for flavour, but not so much it turns the dish greasy. You\u2019ll also want to make sure you break it up really well with your wooden spoon as it fries<\/strong>. Because it doesn\u2019t get a huge amount of time to simmer and tenderize, you don\u2019t want long, tough strands of beef. Here we\u2019re just going to fry off some onion<\/strong>, garlic<\/strong> and red pepper<\/strong> before adding in the beef.<\/p>\n

One Pot Chili Mac and Cheese<\/strong><\/span><\/h2>\n

The awesome thing about this recipe is that it\u2019s all made in one pot<\/strong>, meaning you don\u2019t have to simmer the pasta separately \u2013 it cooks in the sauce! This not only reduces the washing up, but it\u2019s also a great opportunity for the pasta to soak in all those gorgeous flavours as it cooks<\/strong>.<\/p>\n
